Hi Tom,
you can try playing with "Preferences > Advanced > Fonts" and 
increase minimum font size or add user stylesheets that will enlarge 
fonts on all web pages (if you don't know how to write user style 
sheets or add them to Opera's settings just ask and I'm sure many 
here are happy to help you).

However, be aware that some websites will show up very badly with 
overlapping parts if you increase the font size. This is because some 
sites are coded in a very rigid way and expect the text to take a 
certain amount of space and no more. This is one major reason why 
Opera's approach of zooming everything (including images) is useful - 
although sometimes the image resizing causes the annoying artifacts 
you've noticed.
