I have seen similar but only ever on an e-newsletter so replying has never  
been an issue. I think the problem is that you are actually sending  
headers like this:

    From: "Roy Jackson"<roy at squish.plus.com>
    To: "Using Opera"<opera-users at opera.com>

and Opera expects a space between " and <

Thus Opera is seeing the local-part as ["Roy Jackson"<roy] and enclosing  
it in doule quotes to protect the characters that would not be allowed  
without the double-quote protection on the local-part.

I have not checked RFCs on the matter so cannot say whether the fault is  
in the sending mail client or in Opera.
