Hi Steven,
As far as I can tell you, adjusting the identification for a site preference will not change what you see in Opera's "About Opera" information. Are you having an issue where a site is still identifying you as Opera, even when you're masking as IE? (Masking is the more powerful option) If so, a possible reason that I can think of is that the site redirects you to another site and Opera begins to identify itself as Opera again. However, I don't know if the identify feature actually works that way - it may keep masking if you're being redirected from that site.
As for "edit site preferences" being greyed out, take note of which websites don't allow you to change it. Is there a pattern? If so, what is it? If you're not sure, can you list some of the sites where you can't edit the site preferences, so that someone here can independently verify?
